Grandma's summer salad |
Thanks for stopping by today on another Saturday Spotlight journey! Today’s focus is family. Being of Italian and German heritage, if family is around food will be too.
As a child, I would not eat potato salad made with mayonnaise. 50+ years later, I still won't eat it . I like mayonnaise, just not mixed with potatoes.
What I did love as a child, and still do, is a potato salad my grandmother made every summer. As soon as the tomatoes ripened in her garden she would make a refreshing potato salad that had a subtle lemon flavor in every bite full. I was hooked! Grandma knew I loved her salad. She spoiled me and made sure I always had her special salad over the summer.
Grandmas are soooooo great!
Here is Grandma's summer salad recipe that changed my perspective on potato salad.
New red potatoes 3#, boil and cool to room temperature
Beefsteak tomatoes (2-3 large) local grown, cut in large cubes
Large red onion, sliced thin
Fresh string beans (preferably local grown) 2-3 #, steam and cool to room temperature
1 English cucumber. Cut in half and sliced
Juice from 1-2 lemons or a few dashes of balsamic vinegar
Extra Virgin Olive oil, 4-5 tbs.
Salt, pepper, garlic powder and oregano to taste
Mix all together and serve at room temperature. Serves 8
